I am soo into these smoothie bowls lately because I don’t actually like smoothies but this is a nice way to use up extra fruit and veggies while serving as a perfect late morning snack. Teaching early morning classes and sometimes not eating lunch until a little later I realize that I get really hungry between 10-11am and need a boost. Enter the smoothie bowl.
What I used:
- Half a package of steamed beets from Trader Joe’s (the rest went into the freezer!)
- Bowl full of blueberries (I had a huge carton that I knew I wouldn’t be able to finish over my short week at home before heading out of town)
- Two smashed up frozen bananas (I always have a few little bags of smashed frozen banana in the fridge from when the bananas in the bunch get brown by the end of the week)
- 1 pitted date
- splash of water
Blend it all up and pour into a cereal bowl. Top with chia seeds, coconut flakes, golden raisins (leftover from my Moroccan Chicken Recipe!), LiveLovePop Sea Salt Popcorn, and a scoop of crunchy peanut butter.
