KitchFix Lunch Day 2: Mahi-Mahi with Salsa Verde over Arugula, Quinoa & Roasted Zucchini

I gotta be honest, again I was SO pleasantly surprised by this meal from KitchFix. Today’s lunch was Mahi-Mahi with Salsa Verde over Arugula, Quinoa & Roasted Zucchini and while there were heating instructions I chose to eat it as a cold salad and I would highly recommend that.

Note in the pictures below it did not come with the avocado, but I happened to have some ripe ones at home and thought a fresh half of avo could never hurt right?

Let’s start with the sauce because that was the real show stopper – the salsa verde was bright, flavorful, and brought the whole dish together. The other stand out feature was the arugula, it was the perfect bit of spice to compliment the simple mahi-mahi and the slightly crunchy quinoa.

Really I was super impressed with this meal which again didn’t look huge but turned out to be the perfect portion, I didn’t feel over stuffed but I absolutely feel satisfied. Two thumbs up for this one!
