Avocado, Banana Blueberry Collagen Smoothie Bowl

One big challenge for myself in the department of being more mindful about eating and cooking sustainably is simply to use my freezer more! I used to throw out tidbits of leftover fruits and veggies without giving it a second thought, but now I never toss aging produce, instead, I freeze it knowing that it’s a great thing to have on hand for those afternoon hunger pangs when a smoothie bowl can do just the trick.

I recently remembered that I had done this with a smashed up avocado and wanted to see how it would be in a bowl. I also had 2 fresh but aging bananas on hand that needed using and the last big handful of fresh blueberries from the week. To all of that, I added 2 scoops of my Marine Collagen Peptides from Further Foods to give it an extra boost along with a splash of almond milk and a quarter cup of filtered water. After blending on high and adding to a bowl I topped it with hemp seeds & shredded coconut for a really simple, quick snack that I felt really good about.
