Spicy Italian Turkey Sausage & All The Veggies
Another perfectly easy Italian sausage meal! I seriously make some variation of this each week, and it's always a tiny bit different but hits the spot every time. This week I opted for Whole Foods Turkey Sausages and did a mix of spicy and mild because I love them both and can never choose. I paired it with roasted little purple potatoes (I roasted the whole bag all at once and then stored the extra for my lunch this week, #foodwastehack), as well as sautéed peppers, onions, and broccolini.
Growing up, sausage and peppers was a staple in our home so this meal brings on a bit of nostalgia for me. However, we usually ate it with other more Italian dishes - eggplant parm, pasta, or spaghetti squash with a homemade marinara. But as you all know, post Whole 30 I love potatoes so of course, they made an appearance here.
- For the sausages, drizzle in oil roast in a pyrex pan or on a baking sheet at 400 degrees for 45 min
- For the potatoes, drizzle with oil/salt/pep bake on a baking sheet at 400 degrees for 45 minutes
- For the peppers, onions, and broccolini sauté in a large pan with oil/salt/pep over medium/high heat until charred/cooked all the way through (15-20 minutes). I sautéed the peppers and onions first, removed them, then did the broccolini and added them back in to keep warm while the oven items finished off.
