CAULIFLOWER VEGAN ALFREDO
You guys I can’t stop making these creamy vegan sauces. This time of year all I want is warm, stick to your ribs kinda food but I want to feel good after chowing down and I’ve found that eliminating dairy is a key in feeling good for me.
So when Friday night rolls around and it’s 5 degrees outside and no one wants to leave the house, you can bet I’m whipping up a batch of this roasted cauliflower alfredo.
What I Used:
- Roasted cauliflower
- The salted starchy pasta water
How To:
Add the caulifower and 4-5 ladles full of the salty starchy pasta water (after the pasta has cooked) to the blender. Blend it up and then toss your pasta (I use the quinoa & rice variation from Trader Joe’s) and then eat it up with your favorite veggies and add in some Italian turkey sausage or roasted chicken if you’re looking to amp it up a bit. I also served it up with a simple kale salad with avocado, grapeseed oil, lemon juice, and fresh parsley!
