Eggless Turkey Meatballs

As a mom of a baby with an egg allergy I am constantly on the hunt for recipes that avoid egg altogether, finding interesting new replacements for the common binder all the time. This time the solution: unsweetened applesauce! These meatballs are really delicious because they are packed with flavor and they’re a favorite in our house for adults & baby alike!

What I Used:

  • 1lb ground turkey thigh

  • 3 tbsp unsweetened applesauce

  • 2 tbsp panko bread crumbs

  • 2 tbsp chopped sun-dried tomatoes

  • 1 tbsp chopped fresh basil

  • πŸ§‚Salt & pepper .

How To:

  1. Combine the breadcrumbs and applesauce in a large bowl and let sit for a couple of minutes to soak together.

  2. Add all of the other ingredients and mix well

  3. Form into golf ball sized balls

  4. Brown on all sides in a pan or in your slow cooker if you’re lucky enough to have one with a browning function like mine!

  5. Set in the slow cooker on low, cover with a jar of tomato sauce, and cook for 3-4 hours.

    *** As a side note when I doubled this recipe it made about 20 meatballs. We ate 5 each for dinner, then I had 5 for leftovers and 5 that I froze for Ford.
