Easy Turkey Lasagna
Per multiple requests I’m sharing how I made this easy lasagna recently. Truth: it wasn’t a recipe, I don’t have exact quantities I kinda made it up and it worked but here goes!
What I Used:
2lbs ground turkey
1 large jar Rao’s marinara or any you love
1 package ricotta (no idea how much that was just a regular tub of it, doesn’t really matter)
1 package frozen chopped spinach
1/2-1 cup shredded mozzarella
No boil lasagna noodles (my pan held 5 in a layer and I did two layers)
How To:
Heat the spinach per package instructions (in the microwave) then place in a towel or layered paper towels and ring dry. Combine the drained spinach & ricotta & set aside
Brown the ground turkey until fully cooked and add the sauce. Save 1-2tbsp of sauce on the jar and to the jar add 1-2tbsp water. Being the meat sauce to a simmer, cover & let simmer.
I followed the directions from the packaged noodles I bought that were no boil package:
Place a layer of sauce (the sauce & water combo from jar) on the bottom of the pan
Place 1 layer of noodles, do not overlap
Layer half of the ricotta/spinach mixture (just spread with your fingers) on the noodles.
Layer half of the meat sauce over the entire layer.
Repeat noodles, ricotta/spinach/meat sauce.
Cover the top with shredded mozz
Baked covered with foil at 375 for 40 min. Uncover & bake for another 15-20 min
(If you make it ahead of time and put it in the fridge it will need longer to cook, or let it come to room temp first)
